This installation, made especially for the Mint Museum, explores the idea of making functional vessels for the home from locally sourced, natural materials, while paying homage to the craft of baking and cooking. Its title comes from the Greek word meaning absolute sovereignty or self-rule, and here also implies self-sufficiency. The vessels were formed in plaster molds from a dough-like mixture of flour, agricultural waste, and limestone. Jars of these substances, including flour from several types of grain (corn, sorghum, buckwheat, malt, rye, and wheat bran), are displayed alongside the vessels to give a sense of the process and emphasize the natural sources of all of the materials. Also included are jars of dried spinach and paprika (a spice made from dried red peppers) that were used to make dyes to color some of the vessels. The small circular samples on the left show the range of colors that can be derived from roots, vegetables, and spices.
